Dr. Vivencio Mamaril’s
Malunggay Rich Muffin
Ingredients
½ cup butter or margarine
¾ cup sugar (refined)
3 eggs
2 cups all purpose flour
3 tsps baking powder
1 tsp Salt
1 tsp Vanilla
½ cup milk
3 tbsps. blended malunggay leaves
Procedure:
1. Sift together all-purpose flour,
baking powder and salt. Set aside.
2. Cream together butter or
margarine and sugar.
3. Add the eggs to the butter and
sugar mixture. Mix.
4. Add and mix vanilla, milk and
blended malunggay leaves.
5. Then add the set aside dry
ingredients.
6. Pour mixture into greased muffin
pan until two-thirds full.
7. Bake in pre-heated oven 450°F
for 25 minutes.

Note from Cris: I always use virgin coconut oil instead of butter or margarine
this is an interesting food that we can make on nutrition month. if it is ok with you, can i ask for the nutritional value of this product? Thank you anf more power

I’m sorry I don’t know the exact nutritional value. I think a laboratory (DOST or BFAD) can do that. What I am sure, is that this is nutritious. One thing though, it’s better to eat the muffins right after cooking. You wouldn’t know it has malunggay. When we kept the leftovers in the fridge it hardened and the malunggay taste was more pronounced. But this may also be due to too much malunggay. Instead of just a few tablespoons, I used 1 cup malunggay.

wow yummy!
i have tried making muffins too and it was very good. What kind of malunggay did you use in this recipe, fresh or powdered? my muffins still taste good kahit na 2 days na. you can’t notice the malunggay taste. i put 6 tablespoons moringa powder.

I use freshly blended leaves. haven’t tried powdered moringa. will try it next time. Malakas kasi kumain ang mga kasama ko sa bahay kaya hindi inaabot ng next day ang muffin (hehehehe).

yes, malunggay is now available commercially. Honestly, I don’t have any recipe on beverages. But you may start with adding malunggay to your mixes.
