Banana Ice Cream with Malunggay (Moringa)?

Someone has asked me how to make malunggay ice cream. It’s just so sad that I don’t know how and I don’t know where to get a recipe. Luckily while searching DA-BAR (Dept of Agriculture-Bureau of Agricultural Research) site, I came across the ingredients for the ice cream. Just the ingredients. There was no measurements, no procedure. So I copied the ingredients and copied a banana ice cream recipe from makeicecream.com. I will make this when I have the time. My dear friends, if anyone of you will be successful in doing this malunggay ice cream, please, tell me. Thank you.

MALUNGGAY ICE CREAM, ANYONE?
Our objective: To make ice cream by using products derived only from plants

Basic Ingredients:
concentrated soymilk
malunggay fresh leaves
banana fruit (any table-type)
sugar (condensed milk or honey)
soybean oil or virgin coconut oil

So with the above ingredients, let’s all experiment. Go, go, go!

Banana Ice Cream

2 cups milk

2 cups heavy cream

2 eggs, beaten

1 1/4 cup sugar

1/4 teaspoon salt

1 cup purée bananas

1/2 teaspoon vanilla extract

1/8 teaspoon nutmeg

In a saucepan, combine the milk, cream, eggs, sugar and salt. Cook and stir over low heat until mixture thickens slightly and coats the back of a spoon. Refrigerate the mixture until cool. Combine the cooled custard with the bananas, vanilla and nutmeg. Pour into freezer container. Freeze according to manufacturer’s instructions.

    • rozza mae,

    • mas mabuti siguro i blanch mo muna yung dinikdik na malunggay. or to make it easier to mix, use malunggay powder na. just don’t know how much to add
