Oatmeal and Coconut Cookies with Virgin Coconut Oil
1 cup brown sugar
1/2 cup virgin coconut oil
4 tbsp cocoa
3 cups oatmeal
1 cup toasted grated coconut
1/2 cup nuts
Note: after pressing the grated coconut which I used to cook ginataang manok, I toasted the coconut and saved in the refrigerator.
Mix brown sugar and virgin coconut oil well. Add eggs one at a time. Add cocoa. Mix well.
Add oatmeal, coconut, and nuts. mix well. Put teaspoonfull of mixture on a greased tray and put inside the refrigerator to set.
After 15 minutes bake for 20 minutes at 325-350deg setting or until an inserted toothpick comes clean.
