GFCF Diet – Malunggay (Moringa) and Coconut Cookies

My youngest child was diagnosed with global developmental delay when he was three years old. At eleven, he is still late in all aspects of development. Right now, he is in GFCF diet.

This is one recipe that I experimented on. I’m just thankful that kitkit is not choosy with food. He eats whatever I prepare for him.

GFCF Recipe – Banana Bread

Ingredients:

1 cup camote flour

1/8 tsp baking powder

pinch of baking soda

3/4 cup virgin coconut oil

3/4 cup brown sugar

4 large eggs

1cup mashed over ripe cardava (saba) banana

1/2 cup crushed peanuts

procedure:

pre heat oven to 325deg

grease baking pan with vco . sprinkle with flour. remove extra flour.

mix together camote flour, baking powder and baking soda.

Mix vco with sugar well. add one egg at a time and beat at a faster speed until fully mixed.

add mashed banana, add 1/2 cup peanuts then add flour mixture, mix well and stop soon after.

transfer to a baking pan. sprinkle sugar and peanuts topping.

put in oven and bake for 45-50 minutes or until an inserted toothpick comes clean.

Topping:

Mix 1/2 cup brown sugar with 1/2 cup crushed peanuts

The finished cardava (saba) banana cake? or bread?

now ready for taste test

  3. can u give the exact address and telephone number of trh marketing in cebu..cause i really need gulaman stick which where they pack..i have a lot of order of gulaman stick…thanks!
